The brainchild of Colin Fukunaga and Robert “Mags” Magsalin, the “Fuku truck” mobile eatery serves up a slice of Tokyo in Vegas: six types of burgers spiced with Asian flavors, from sake to yuzu to mirin. Toppings include fried eggs,avocado cream, spicy mayo, and crispy onion strings. Better still, the truck comes with its own party. Late-night eaters flock to Fukuburger’s everchanging location—check its Twitter feed (@fukuburger)—on Westside Wednesdays for break-dancing and rap battles on the curb 8 p.m. till late.
