Born from the close work of Nader Chabaane, Director of Mixology at the Fairmont Le Château Frontenac and his first bartender at Le SAM Bistro, Jean-Felix Desfossés, the cocktail Jam’ Le SAM quickly became one of the must try cocktail in Québec and is now proudly sitting on the signature drinks list. Inspired by local flavors (cranberries & maple syrup), this cocktail, very easy to prepare at home, will surprise your friends and families during winter season.

o 1 oz fresh lime juice
o 1/2 oz maple syrup (Noble Tonic 2, aged in Bourbon barrels)
o 3/4 oz homemade cranberry & pink pepper marmalade
Shake all ingredients for 15 to 20 seconds. Filter all ingredients into an old fashion glass. Fill the glass with crushed ice. Garnish with an ice scoop of berries.
For the Jam:
o 6 cloves
o 1/4 cup pink pepper
o 3 cups cranberries
o 1 cup white caster sugar
o 150 mL water
Muddle the clove and pink pepper. Put all ingredients in a large stockpot, bring to boil, and simmer for 15 minutes. Use a thermomix (or a blender) for 30 seconds to blend all the ingredients. Préserve.
